A salad is a salad, right? Wrong!
There are so many fancy and original names for a salad, but do they really pack a punch with nutrition? A salad should be tossed with nutritional foods that add value to your meal. Not only that, you should be able to eat as much as you want.
I don’t like to follow the crowd when a hype starts about a super food. However, there are a few green leaves that deserve just that. The basis of this kick-ass salad are about two green leaves in particular.
SALAD INGREDIENTS
100g Kale
100g Spinach
1/4 Red Capsicum
1/4 Yellow Capsicum
1/4 Orange Capsicum
250g Edamame (any legume or bean would work)
100g Grated Carrot
100g Chopped/Grated Red Cabbage
1 Small Mango (pineapple/red apple/peaches work well)
1 Cup of cooked Quinua
DRESSING INGREDIENTS
1 Tbsp Honey
1 Tsp Dijon Mustard
150ml Apple Cider Vinegar
80ml Olive Oil
Salt to taste
The dressing makes enough for 4 days.
All the ingredients, including 1/4 portion of the salad dressing, in a mixing bowl and toss. This is a delicious meal for those warmer days. Serves 2
