During winter, I love eating comfort food. I enjoy a steaming hot meal that leaves me feeling all warm and cozy. Do you think that can be achieved without any meat? If you said yes, then you would be right! Imagine sexy butternut (sweet pumpkin), that has been seasoned with a bit of salt and stuffed with delectable ingredients.
Follow me to the kitchen and let’s get cooking!
You will need:
– 1 large butternut
– onion
– mushrooms
– any kind of pulse or bean, I normally use chickpeas in a can
– green pepper
– vegetable oil
– salt
– pepper
Instructions:
Pre-heat your oven at 200oC. Place baking paper or foil on an oven tray.
Cut the butternut in half from neck to base. Clean out the seeds and strings. Brush butternut with oil or vegan butter and sprinkle salt and pepper all over. Place it in the oven and bake for 40 – 45 minutes*.
*check if the butternut is cooked by pocking a knife through the neck if not tender bake for another 10 minutes
While your sexy butternut is baking, you will continue with the stuffing.
Chop your onions, green pepper, and mushrooms. Drop them in a pan with a splash of vegetable oil, sprinkle with salt and pepper and brown them. Once brown, add the can of pulse or bean. Mix well on medium heat until all ingredients are warm.
Now the stuffing begins…….
Take a fork or spoon to scrape the center of the butternut. Not too close to the shell. Add the stuffing to the scrapped center. Make sure you load it well. We don’t want anyone going hungry!
AND voila! Your meal is ready.
